Polish Horseradish (also called chrzan)

Within the last few years I have been introduced to some Polish food and if you know me, well you know I love food in general, but you would also know that I love to try new foods. I think it was last year that I got to try this amazing “relish” of pickled beets and horseradish and ever since then I’ve been meaning to try and make it but haven’t gotten around to it. With all of the Easter buzz I happened to see a picture of this and it refreshed my memory that I wanted to try and make it. So I found a very simple recipe online and wanted to share it. Hopefully I will have some time to try this over the weekend and update you on how it was. If you make it before I do or have a better recipe, please share it!

Polish Horseradish

Beet Horseradish

Ingredients:

1 teaspoon white vinegar
1 teaspoon brown sugar
2 cups homemade or purchased horseradish
1/4 teaspoon salt
1 pound beets, cooked, peeled, cooled and grated or 1 (14-ounce) can prepared beets, drained and grated

Preparation:

1. In a large bowl, mix together vinegar, brown sugar, horseradish and salt until well combined.
2. Add beets and mix thoroughly. 3. Pack into clean sterilized jars and store refrigerated for up to 2 weeks.
